Ingredients (serves 4-6 people)

• 3 x bell peppers red, yellow and green sliced
• 2 x red onions sliced
• 200 ml passata or a can chopped tomatoes
• 75 ml hot sauce
• 4 x skinless boneless chicken breasts
• 1 tsp ground cumin
• 1½  tsp sugar
• 1½  tsp salt
• 1 tsp pepper
• ½ tbsp smoked paprika
• 3 x garlic cloves chopped
• 2 tbsp olive oil
• 1 x big bag tortilla chips
• 1 x large ripe tomato diced
• 1 x avocado
• 100g grated cheese
• Pinch chopped fresh coriander to garnish
