You will need...
Creamy Coconut Peanut Curry (serves 4-6 people)
- 1 x onion
- 2 x cloves garlic chopped
- 2 x red chilli's finely chopped
- 2 tbsp veg oil
- Good pinch salt
- 3 tsp turmeric
- 2 tsp paprika
- 2 tsp ground coriander
- 2 tsp ground cumin
- 3 tsp garam masala
- 1 tbsp peanut butter
- 1 x lime
- 600g green lentils
- 1 litre (approx) vegetable stock
- 1 x can coconut milk
- 1 x can chickpeas
- Fresh coriander
Homemade Flatbread to accompany above curry
- 240g Strong bread flour
- 1 tsp yeast
- ½ tsp salt
- 118 ml warm water
- 2 tsp olive oil
- 2 tbsp melted butter
- 1 x garlic glove
- Good pinch chopped parsley
